Julie’s Mango Salsa

I found the Ataulfo mangos at Trader Joes this week. If you have never tried this variety of mango, you are in for a treat. They are velvety in texture and so delicious. If you don’t really care for mangoes, give these a try…unlike any other mango and why they have rightly earned the name ‘King of Mangoes’

Ingredients: (about 2 cups)
• 2 fresh mangos, diced (Ataulfo variety)
• 1/4 cup crushed pineapple
• 1/4 cup red pepper
• 1/4 cup green pepper
• 1 Jalapeno pepper, remove seeds and chop very fine
• 1 medium shallot, chopped finely
• 2 TBLS vomFASS Don Carlos Extra Virgin Olive Oil
• 2 TBLS chopped fresh cilantro
• 2 TBLS vomFASS Mango Balsamic Vinegar
• Salt and Pepper to taste

Directions: Mix together and serve with black bean chips, over grilled salmon, tuna or chicken.
