Peruvian Salmon Ceviche

Directions:

  1. Wash the fish under cold running water, pat dry on kitchen paper and finely dice.
  2. Place the diced fish in a large mixing bowl together with the other ingredients and mix to throroughly coat.
  3. Refrigerate for 2-4 hours mixing several times during the marinating period.
  4. When ready, spoon into serving dishes and top with freshly chopped cilantro.
