In the west of Sicily, we have found a very fine extra virgin olive oil from controlled organic cultivation. In addition to fruity nuances, the olive varieties Nocellara del Belice and Cerasuola produce grassy notes and hints of green bananas, underlined by a reasonable bitterness and sharpness. The name given to this new olive oil is a church in Castelvetrano near the oil mill. The church of San Domenico dating back to 1470 is lovingly called the Sistine Chapel of Sicily.
