Preheat oven to 425F, and line a cookie sheet with foil.
Cut all the vegetables into 1 ½ inch chunks, then toss them in a large bowl with the garlic cloves, thyme leaves, and VOM FASS Basil Extra Virgin Olive Oil until evenly coated.
Spread the vegetables on the cookie sheet in a single layer.
Sprinkle generously with VOM FASS Salt and Pepper.
Place the cookie sheet in the oven and roast for about 45 minutes, turning the vegetables once halfway, until they are tender and beginning to turn golden.
Drizzle with balsamic vinegar and serve hot. This recipe also works well on the grill!
