Arugula and Nectarine Salad

Salads are always interesting when you incorporate fruit and nuts like the nectarines and pistachios in this delicious saladIngredients (serves 2-4)• 4 cups arugula• 1 small romaine head, chopped• 3 nectarines, thinly sliced• 1 TBLS thyme, leaves only• 3 TBLS lemon juice• 2 TBLS vomFASS Don Carlos Extra Virgin Olive Oil• Salt and pepper to taste• 3 TBLS pistachios, shelled and roughly choppedDirections1. Place arugula, romaine, nectarine, and thyme in a mixing bowl. Add the lemon juice, EVOO, salt and pepper and toss lightly. 2.
