Shrimp & Pineapple Fried Rice

I love fried rice recipes. They are so easy and the leftovers (if there are any) are equally delicious. Thanks Kat for another delicious combination of flavors!

Ingredients
• 2 eggs
• ½ cup chopped onion
• 3 garlic cloves minced
• 1 can unsweetened pineapple chucks, drained
• ½ Ib. shrimp cooked
• ½ cup frozen peas
• ½ cup frozen corn
• 2 green onions sliced
• 3 TBLS soy sauce
• 1 TBLS hoisin sauce
• 1 tsp sugar
• 2 tsp vomFASS Grape Seed Cooking Oil
• 1 TBLS favorite vomFASS EVOO
• 1 tsp. vomFASS Toasted Sesame Oil
• ¼ tsp pepper
• ¼ cup cashews
• 3 cups cooked white rice (i.e. Jasmine, Basmati)

Directions
1. In a small bowl whisk eggs. Scramble eggs on medium heat in Grape Seed Cooking oil until just cooked through. Set aside.
2. In same skillet sauté onion in your favorite EVOO until tender. Add garlic, cook for another minute, stir in rice, pineapple, shrimp, cashews, peas, corn, and green onions heat through.
3. Combine soy sauce, hoisin sauce, sugar, toasted sesame oil and pepper and add to rice mixture and stir in eggs and shrimp.
